Some ideas of our Main Dishes

Land side

  • Duck leg confit -Blueberry, thyme and red wine sauce, mashed cauliflower, fried capers and grilled seasonal vegetables

  • Canadian beef short rib -Cooked 48h sous-vide at 62C, parsnip and cauliflower purée, Tennessee bourbon sauce, smoked salt infused carrots, patisson, Brussels sprout leaf and hazelnut dust

  • Lamb shank -Braised with orange and fennel, lemon barley risotto and roasted seasonal vegetables

Sea side

  • Salmon gmaple and soy rillé -  Crusted arugula withfleur de sel, cauliflower and parsnip purée, grilled seasonal vegetables

  • Roasted seabass - Ccrushed grapefruit, tangerine, cucumber celery, fennel and grilled pear
